GOLDEN PEAR CHICKEN
Slowed Cooked Chicken
Ingredients:
(i) 1pc Fresh hormone-free chicken leg, with skin & bone.
(ii) 2 bottles Allswell Golden Pear drink
(iii) 10 pc White Peppercorn
(iv) 5 Star Anise
(v) 1 Chinese Namsui pear
(vi) 1 Cinnamon
(vii) 1 Bayleaf
Method:
(a) Sousvide*, combine all in a vaccum sealed bag and sousvide cooked at 65degC, 1h 30mins.
OR
(b) In an oven, combine (ii) - (vii) confit with oil at 130degC, 2 hrs.
Golden Pear Sauce
Ingredients:
- 1/2 bottle Allswell Golden Pear drink
- 1 Namsui Pear
- Little cornstarch water
Method:
- Bring to a boil, thicken with cornstarch water. Ready to use.
Pear Relish
Ingredients:
- 80ml Allswell Golden Pear drink
- 1pc Bayleaf
- 1pc Cinnamon Stick
- 1 Pear, peeled & diced
- 1 tsp Sugar
Method:
- Combine all leave to macerate 2 hrs in chiller. Ready to use.
Assemble & Serve
Chicken with skin seared to crispy
